Torta
A.k.a: Huevo en torta, tortilla de huevo, or rice omelette (the last one is what I personally call it sometimes)
Ingredients
- 2 eggs
- A bowl of cooked white rice, leftovers from the day before will work fine (Maybe about half a cup? Enough for one person)
- Parmensan (However much you want, but I recommend at least a teaspoon or so)
- A small bit of cooking oil, maybe a tablespoon worth at most. You shouldn't need too much oil honestly!
Instructions
- Get a frying pan ready for the cooking! Put oil in the pan and leave it to heat up on the stove. Recommended to put it on medium heat so it doesn't heat up too much.
- While that's heating up, mix the bowl of rice with the egg and parmensan. Make sure it's thoroughly mixed!
- Once the pan is heated up enough, pour half of the egg mix into the pan.
- Let it fry for a little less than a minute on each side. Flip it once you can move the whole thing, and not just squish one side when you try to flip it over (this happened to me a lot before I got the hang of it).
- Cook until both side are crispy and golden! This is important so that it ensures the egg is cooked all the way through.
- Finally, repeat steps 3 through 5 with the remaining egg mixture. Add a bit more oil if you feel you need to, but again, you shouldn't need too much oil to cook this.
- Enjoy your two tortas with a friend! Or eat them both yourself, I'm not gonna judge you.
My Ramblings About This Recipe
This is one of those Latino food names that can mean completely different dishes depending on the country, and sometimes even the region! This recipe is for a Honduran version of the dish, in particular a version my mom makes sometimes.
Despite the simplicity, it's pretty good! Though I think part of the tastiness here relies on two things: Using excellent quality eggs, and using good rice. Which makes sense, those are the main ingredients.
Anyways, recommendations for topping to put on a torta: mustard is always a good one in my opinion! Meanwhile, my mom likes to use collard greens if she's able to buy them. Also, I believe certain types of salsa are used as toppings for this too. I think whether or not it's the more spicy varieties of salsa differs from region to region.
Otherwise, you can probably use other toppings or ingredients that go on a normal omelette here. Try it out and see what works!
